Chef Gabe's Vegan Chocolate MUD\WTR Mousse uses aquafaba as a base, coupled with a hearty dose of our :rise Cocoa blend and plenty of chocolate to satisfy the most intense chocolate cravings.
If "aquafaba" sounds alien to you, take a moment to familiarise yourself with it. It's the liquid you find in your tin of chickpeas, and it's a game-changer for vegans whipping up desserts.
This is a dessert for those truly special moments.
Preparation time: 20 minutes
Ingredients
- 180ml cup aquafaba
- ¾ cup dark chocolate chips (go for 70% cacao content or higher)
- 2 tbsp maple sugar
- 1 tbsp MUD\WTR's :rise Cocoa blend
- ½ tsp apple cider vinegar
- 1 tbsp chocolate shavings to garnish
Directions
- Place the chocolate drops in a glass or metal bowl and set it over a pan of simmering water to allow the chocolate to melt. Continuously stir until fully melted.
- Once melted, whisk in MUD\WTR's :rise Cocoa blend and set aside.
- In another bowl, add the aquafaba and the apple cider vinegar. Using your mud whip, whisk the mixture into stiff peaks.
- Once you reach stiff peaks, start adding the maple sugar bit by bit, Keep whipping the whole time.
- After the melted chocolate has cooled down, start folding it into the whipped aquafaba and maple sugar mix.
- Divide the mousse among four glass dishes, sprinkle with chocolate shavings, and chill for two hours in the fridge.
- Serve and savour every bite!
